Yucho Shuzo, founded in 1719, is located at the foot of the scenic katsuragi mountain range in Gose City (Nara Prefecture).Nara was actually the first region to seat a capital to the Japanese people, way back in the 8th Century. While the glory daze of Nara were not long - the capital moved to Kyoto in 794 -it was a significant period culturally.Sake production was confined primarily to the Imperial court and to large temple and shrines.That's why sake is often asosociated with religious and festivals.a style of fermentation starter development known as "bodai-moto" was developed in Nara. It was Considered a beginning to modern fermentation starters. The method was fell out of use but revived a decadeor so back by local brewers using water from the original shrines and old records. Of course our Kura is brewing by"bodai-moto" as a one of the method.
Our sake presents overall a solid, mild flavor profile. On top smell is a subtle but lively flavors. Each of our sake, from average sake to top-grade junmaidaiginjo, has its own strengths and qualities. Some is more quiet, some is fresh fruity and fragrant. But all the basic qualities infused by great rice, great water, excellent yeast,and with art.Especially the water is the major factor to the taste and feel .Our water is very harder than most sake-brewing regions in Japan.the hardness affects for the final product.

The People
The current director, Chobei Yamamoto, is the twelveth-generation director of Yucho Shuzo.Yucho makes 5000 "koku" a year. As one koku (the traditional measure of sake in Japan) is 180 liters, about 1000 kiloliters is brewed here each year, with the way of traditional and new techniques.
